the walrus’ modification for the BGE from a Dorothy Thomas’ recipe. Yesterday we had Pulled Beef, today we're pulling out some leftover Pulled Pork to go with the Baked Beans. 06:20am - Beans are cooking after soaking
since yesterday. |

10:00am - The Baked Beans are on the BGE. The smoke is coming from some Jack Daniels Oak chips. The Dutch oven is sitting on two flat fire bricks and thanks to ChefRD's idea, covered with HD foil to make cleanup a little easier. Right now the dome temp is 200 degrees. The only change that I made to the recipe was to add a chopped up green pepper (the 1st from my garden) - if you look closely, you'll see the little green chunks - I also chopped up 3 each 7 inch by 3/8 inch slices of precooked ham. Smells wonderful! |

01:30pm - Couldn't wait so I had lunch. A little potato salad, a little Cole slaw and a bowl of baked beans. These are really good. They should be done and off the BGE at 2pm - after my snack I did add some Kosher salt and a little cayenne pepper - dinner is only a few hours away. Great beans - make sure that you give them a try. |
