Preparing for the initial fire. I used Big Green Egg 100% Natural Lump Charcoal and a starter block.  The newspaper is merely laying on the deck behind the grill. NOTE - Before you start the fire, make sure that the hole in the fire box matches up with the lower vent - a tip from 'Cat' 

This is a view looking down the top as the fire begins. It took longer than I expected to reach cooking temperature - about 15 minutes to a dome temperature of 700 degrees. 

The results were outstanding. I stared with a 2.5lb London Broil about 2 inches thick. It was marinated for about 4 hours. It was seared on both sides for about 3 minutes and then allowed to reach an internal temperature of 130. After slicing it was about perfect.


1/26/2000- Perfect again! 3 minutes per side followed by 4 minutes of slow down - meat was about 1 inch thick.
