- We
followed the recipe as closely as possible. We started out with a marinate
for 3 hours based on the recipe posted by Hog Wild (equal
parts of light soy sauce, olive oil, and lemon juice) – missing a few
ingredients I substituted regular soy and lime juice – 1 out of 3 isn’t
bad. The filets were about 2 inches thick. I seared each side for 3 minutes at 750 degrees (dome temp) and then closed the top and bottom vents. Cooked for an additional 7 minutes and checked with my polder for the desired 135 degrees. Fortunately, it was a little more rare than the picture appears. As always, the sweet potatoes were excellent! |

10/16/99 - Same recipe applied to a beef tenderloin. Don't know who thought of this mustard thing, but it sure works! |

10/24/99 - Would you believe, same recipe used on London Broil. This time I used lemon juice in the marinate. This recipe is probably for the 'Perfect Every Time' recipe book! Thanks to all on the forum who shared their secrets. |
