11/05/99 - Guinness/Apple Baby Back Ribs |

Today the ribs went on the
grill at
12:30pm after soaking for the last 8+ hours in a marinate of 1 bottle of Guinness mixed with
1 tsp onion powder and 1 tsp garlic powder.
Before meeting the grill, they were covered with JJ's rub and a coating of yellow mustard. This week we are doing the full 3-2-1 (6 hours) recipe looking to eat at 6:30 -- I really like ribs. BTW -- the entire cooking time is indirect heat -- fire bricks and a drip pan that contained the balance of the marinate. Phase 1 - The ribs are smoking at 250 degrees with a mixture of hickory and mesquite chips. The actual rib recipe is a mixture of Nature Boy's Guinness Ribs and George T's Apple juice Ribs. |

During Phase 1 (3 hours) the ribs were
turned every 45 minutes and sprayed with apple juice.
There are 2 individually wrapped sweet potatoes (on
the grill since 2:00pm) in the foil behind the ribs. 3:30pm - Phase 2 (2 hours in foil, still at 250 degrees) begins. The ribs were again sprayed with apple juice, wrapped in foil and placed back on the BGE.

5:30pm - Phase 3 begins (BGE still at 250 degrees) - out of the foil and sprayed with more apple juice, the ribs go back on the grill -- one rib 'kind of' fell off - spicy and good! |

06:10pm - I couldn't wait the full 6 hours -- but it really didn't make any difference. They truly were 'fall off the bone' ribs. The picture on the left shows dinner tonight -- one word, GREAT! Thanks to Nature Boy and George T - if you want outstanding baby back ribs -- try them, you'll like them! |

baby back ribs to go with the leftover baked beans and Cole Slaw that
we served on Friday.
