Pork Spare Ribs - 12/11/99


09:55am - Just returned from the store with about 4lbs of pork spare ribs. On the left, cut in half with the membrane removed. Now covered with mustard, basic BBQ rub and sealed in plastic. 

12:35pm -> On the Grill at 225 degrees.

2:00pm - the sweet potatoes (wrapped in foil with a pad of butter) are on the grill.
3:00pm - I let the temp climb to 300. 
3:30pm - sprayed with apple juice and wrapped in foil.
4:30pm - ribs are out of the foil and back on the grill.  I removed the fire bricks and the 2nd grid and placed the ribs on direct. 

5:30pm - left, about ready to eat. The sweet potatoes are still in the foil.
6:00pm - the ribs were meaty, moist and best described as fall off the bone ribs. Thanks Tim M, the sweet potatoes, as always, were excellent!
