12/24/99 -  Christmas Eve Prime Rib ala Earl


 

This is  4.9lb, 2 bone Prime Rib that we are getting ready to prepare for Christmas Eve dinner. This picture was taken just to capture the moment.

02:45pm - On the grill - the temperature has yet to stabilize, but we are shooting for about  375-400 degrees. The roast will be cooked bone side down.

04:30pm - One of our favorites (left) is what we call oven baked potatoes. Red potatoes, quartered (or smaller) and cooked in a large pan with lots of oil and a few onions. Just after this picture, they we placed in a pot for the oven where they will cook until the Prime Rib (right) is ready. 

I removed the Prime Rib from the grill at 139 degrees and let it rest for 15 minutes - next time I will remove it at 135 degrees or cut it immediately.
