02/17/2000 - Gfw's Black Bean Chili

Recipe

The process starts with 2+ lbs of sirloin  - the steak the picture is a top sirloin.

Far left is a piece of the beef waiting to be sliced. In the center is beef that has been sliced like beef jerky.

After slicing like beef jerky, the beef is then cut across the strips - most pieces will end up about 1 inch in length by 1/4 to 1/8 in square.

The next place this beef will end up is in the Dutch oven to get browned with a little minced garlic and about 1/2 large chopped onion.

Starting (left) with the olive oil, garlic and onions. On the BGE (right) ready for about 3hours at 350 degrees.
