03/05/2000 - Nature Boy's Ginger Mahogany Ribs

02:00pm - The ribs are on the grill. They were marinating for the last 22 hours in NB's marinate - there was none left in the bag - it was all soaked up by the ribs.   Much to my surprise and delight, the membrane was removed by the butcher - didn't even have to ask! Notice the ribs weren't touched since they were put on.

The ribs were positioned  above a water filled drip pan sitting on firebricks - the 2nd grid is sitting on two more upright firebricks above the drip pan.

MBR_Ribs01.jpg (355729 bytes) 04:00pm - 2 hours on the grill - I'm proud of my self, I didn't even peek! If you look below the ribs, you can see the fat dripping into the water. Nature Boy only repositioned at this point - I decided to flip the ribs over for the 3rd hour. Sure smell good!

05:30pm - started putting the sauce on the ribs - did both sides, flipping every 7 minutes.  

MBR_Ribs06.jpg (409647 bytes) 05:45pm - decided to give them a try - definitely cooked and could be called "falling off the bone" ribs - the picture to the left doesn't do the ribs justice - I cut 2 of the 1/2 slabs, the other will be lunch on Tuesday. 

Results - cooking time was perfect, taste was excellent. The only change that I will make next time (and there will be a next time) is to not add the tbs of salt.   My advice - try em, you'll like em!
