This started with a 5lb
beef brisket. After removing the fat cap, it was sliced and placed in the marinate at
8am
yesterday. I used a 2 gallon freezer bag for marinating the beef.

first 2 pictures illustrate my new contraption - following other examples
from the forum, I made the leap - now well see how well it works. The three
bolts are only attached to the lower grid - the top one mere sits on the
uprights.
