Gfw's Memphis-Style BBQ Sauce

The starters...
· 3 tablespoons butter
· 1/2 cup minced white onion 

Wet Ingrediants...
· 2 15oz cans tomato sauce 
· 1 cup cider vinegar
· 1/4 cup Worcestershire sauce
· 1/4 cup lemon juice
· 1/4 cup soy sauce
· 1/2 teaspoons Tabasco <- only if you want it HOT

Dry Ingrediants...
· 1 cup packed dark brown sugar
· 1 tablespoon ground mustard
· 1 tablespoon ground black pepper
· 1 tablespoon chili powder
· 1 1/2 teaspoon garlic powder
· 1 teaspoon kosher salt 
· 1 teaspoon celery salt
· 1 teaspoon Paprika
· 1 teaspoon Cilantro leaves
· 1/2 teaspoon cayenne pepper <- only if you want it HOT

The Method...
Melt the butter over medium heat and add the minced onion. Sauté the onions for about 6-7 minutes or until they start to turn golden/clear. Add the balance of the ingrediants, bring to a boil and then let simmer on low for about 45 minutes. The result will be a dark red thin BBQ sauce – great for basting pork chops and baby back ribs.

Cooking notes...
Start by adding either the Tabasco or the Cayenne pepper - and maybe at about 1/2 the indicated amounts - with both added in the amounts indicated, you will have a HOT Memphis-Style BBQ Sauce!
