Oaxacan-Style Ribs
Adapted from "The BARBECUE BIBLE - Steven Raichlen"
My version (minor changes) of the Rib Rub...
6 cloves peeled garlic
1/4 cup distilled white vinegar
3 tablespoons water
1 tablespoon dried thyme
1 tablespoon dried oregano
1 tablespoon dried marjoram
2 teaspoons salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1/4 teaspoon ground red pepper
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
Put all the ingrediants in a blender and blend - rub the mixture over the ribs and let sit for about 24 hours.

2 fresh ripe medium tomatoes
1 medium white onion
2-8 serrano or jalapeno chiles
1/4 cup fresh cilantro
3 tablespoons lime juice
1/2 teaspoon salt
