BBQ Pork Tenderloin

Barbecued Pork Tenderloins - Serves 6

The Ingredients:

4 1/2 lb. Pork Tenderloins (About 6)
2/3 cup fresh Orange Juice
3 Tbs. Light Soy Sauce
3 cloves Garlic, crushed
3 sprigs fresh Rosemary OR
1 tsp. dried Rosemary
1/4 tsp. Salt
1/2 tsp. freshly ground Black Pepper
Splash of Vegetable or Canola Oil

The Method:

Place pork tenderloins in a shallow, non-corrosive pan. Add the orange juice, soy sauce, garlic and rosemary. Sprinkle on the salt and pepper. Turn the tenderloins over several times in the pan while the pork is marinating. Refrigerate for about 2 hours prior to grilling.

When the grill is hot and ready for cooking, brush a bit of vegetable or canola oil over the racks. Place the pork tenderloins on the grill and cook until crusty on the outside and warm and juicy on the inside, usually about 20 to 25-minutes on a moderate grill.

Slice tenderloins on the diagonal, about one-half-inch thick and serve warm.
