Spanish Rice

Gordon, I'm going to try using
pulled pork for enchilada's.. they looked great. Here is a recipe for
Spanish Rice you might want to try. It was originally from
"Better Homes and Gardens" many many years ago, and is by far the
best recipe we have ever found. If you try it and like it feel free to
post it on your web site.
Spanish Rice

Better Homes and Gardens)
| 8 | Slices of bacon, cooked crisp and crumbled |
| 1 cup | Finely chopped onion |
| 1/4 cup | Chopped Green (bell) pepper |
| 1lb can | Tomatoes |
| 1 1/2 cup | Water |
| 1/2 cup | Chili Sauce |
| 1 tsp | Salt |
| 1 Dash | Pepper |
| 1 tsp | Brown Sugar |
| 1/2 tsp | Worcestershire |
| 3/4 cup | Uncooked rice |
Cook onion and pepper (in 1/2 of the fat from the bacon) until tender. Add rest of ingredients. Stir, cover and simmer for 45 minutes.

Tim -- the Spanish rice turned out great! As always I had to modify the recipe - your dash of pepper turned into a 1/2 tsp of cayenne pepper. I cut the onions slightly (after chopping it was about 3/4 cup and I didn't take the time to cut another) - this is a keeper.
