Guinness/Apple Ribs

From Nature Boy's Guinness Ribs - let the ribs swim for 8+ hours (or overnight) in a marinate made with Guinness Stout. Throw in a 1 tsp garlic powder and 1 tsp onion powder. Save any extra marinate for the drip pan.
From George T's 3-2-1 Apple Juice Ribs - About 6 hours prior to dinner retrieve the ribs from the Guinness bath. Pre-heat the BGE to about 250 dome temperature. I used a combination of hickory and mesquite chunks for smoke. Ribs were covered in mustard and sprinkled with JJ's rub. As they went on the grill, I started spraying with apple juice -- repeat apple juice spray every 45 minutes.
The dome temp stayed in the 225-250 degree mark for the entire time. The progress...
- 12:30pm - Ribs on the BGE
- 03:30pm - I removed the ribs from the BGE, sprayed them with apple sauce, wrapped them in foil and placed them back on the grill.
- 05:30pm - Ribs removed from the foil and placed back on the grid. Looking good so far!
- 06:10pm - Ribs removed from the grill and devoured! They were really very good!
