Cedar Plank Salmon
I found this recipe in my mail this morning (11/28/99) and decided that it sounded pretty good. I'm going to look for some untreated cedar this week.
CEDAR PLANK SALMON, USE YOUR SALMON STEAK OR FILLET. CUT A 1"X 4" OR
1" X 6" CEDAR PLANK TO SLIGHTLY LARGER DIMENSION OF THE STEAK OR FILLET.NOTE THE CEDAR SHOULD BE ABSOLUTELY UNTREATED, DON'T WANT ANY CHEMICALS IN OUR FOOD.
SET BGE TO 350 DEGREES, PUT SALMON ON PLANK AND BAKE OR COOK FOR APPROX 8 MIN OR UNTIL 110 DEGREES INTERNAL TEMP. THE PLANK SHOULD CHAR A LITTLE ON THE BOTTOM, THAT'S NORMAL. CEDAR IS AN AROMATIC WOOD AND HERE IN THE PACIFIC NW THE NATIVE AMERICANS COOKED SALMON THIS WAY. YOU CAN ALSO SERVE THE INDIVIDUAL SALMON SERVINGS ON THE PLANKS THEY WERE COOK ON. FOR ADDITIONAL SIDE DISHES YOU CAN COOK CLAMS ON THE BGE UNTIL THE SHELL OPENS, DIP IN GARLIC BUTTER AND ENJOY.
